Field to Fork Farm

Field to Fork Farm is a standard of good agricultural practices for the production and packaging of fruit and vegetables, prepared by Marks & Spencer, which is mandatory for all suppliers of this UK distribution company.

To better match the standard, products are grouped into four categories and each category has requirements for the different products. The definition of requirements for a given product depends on category to which it belongs:

  • Category 1 - Fruits and vegetables products that can be consumed raw, do not have a skin or shell that is removed before consumption and that presents higher risk or history of pathogenic contamination. It is the case of leafy vegetable, onion salad and fresh or frozen herbs.
  • Category 2 – Fuits and vegetables products that can be consumed raw, do not have a skin or shell that is removed before consumption and that presents higher risk or history of pathogenic contamination. As it happens with beets, broccoli, cabbage, carrot, cauliflower, celery, zucchini, cucumber, melon, mushrooms, peas, radish, raspberry, strawberry and tomato.
  • Category 3 - Fuits and vegetables products that can be consumed raw, have a skin or shell that must be removed before consumption or grow away from the ground or do not present a significant risk or history of pathogenic contamination, such as apples, apricots, citrus fruit, cherry, garlic, grapes, green beans, kiwi, nectarines, pears, peaches, plums or dried fruit.
  • Category 4 - Fuits and vegetable products that are always cooked, like artichokes, asparagus, aubergines, Brussels sprouts, leek, potato, pumpkin or sweet potato.

The standard is divided into seven chapters and five of them are of mandatory verification:

  • Management System Quality and Traceability
  • Food Safety
  • Packing facilities requirements, which are verified in audit only if the organization has a facility for the packaging of the product
  • Organic Production - happens to be verified when the organization produces this type of organic products
  • Pesticides
  • Environment
  • Genetically modified organisms
